Maple & Brown Sugar Glazed Pork Loin image

What You’ll Need

1 Prairie Fresh® boneless pork loin, 3-5 pounds
16 ounces pure maple syrup
1 pound brown sugar
8 ounces BBQ rub
1-2 pounds baby heirloom potatoes
1 tablespoon salt
1 tablespoon pepper
1 tablespoon thyme
1 tablespoon onion powder
1 tablespoon garlic powder
½ cup olive oil

Directions

Heat grill or oven to 350 F. Remove pork loin from package and pat dry with paper towels. Cut loin in half and rub each side with BBQ rub, covering pork completely. Place in grill or oven, flipping loin every 15-25 minutes.

While pork is cooking, mix brown sugar and maple syrup together and set aside. Add 1.5 quarts of water to a saucepan and bring to boil. Add potatoes to boiling water and cook for 15-20 minutes.
Once pork loin reaches 135 F, spoon or brush maple and brown sugar sauce over pork until internal temp is 145 F. Remove from heat and let rest while potatoes finish cooking. Once potatoes are soft, drain from water. Place potatoes on an oven-safe cooking sheet and smash each piece to a flat patty-like shape using the bottom of a glass or cup. Drizzle potatoes with oil and season with salt, pepper, thyme, garlic and onion powder to taste.

Place oven on broil and cook potatoes for an additional 5-10 minutes or until golden brown. Cut pork into ½-inch-thick pieces and drizzle with remaining pork/brown sugar and maple syrup juice. Enjoy!
