What You’ll Need
1 Prairie Fresh® pork shoulder butt
Southwest seasoning, to taste
Kosher salt, to taste
1 tablespoon vegetable oil
1 bag corn husks
Masa dough
Directions
Trim pork from around the bone. Slice pork into cubes and season liberally with southwest seasoning and kosher salt. Set Instant Pot to sauté and brown pork in pot with vegetable oil. Once pork has been browned, set Instant Pot to pressure setting and cook for 1 hour and 15 minutes. Remove pork from Instant Pot and shred with tongs or hands. Season again with southwest seasoning.
Take premade masa dough and spread on the wide part of corn husk. Place pork on masa dough and roll husk. Set Instant Pot to steam and steam tamales for 20 minutes, making sure not to overstuff the pot.
Remove, let cool and enjoy!
