anchovies (as needed)
capers (as needed)
garlic (as needed)
cilantro (as needed)
mint (as needed)
sherry vinegar (as needed)
olive oil (as needed)

1 baguette (fresh, toasted)
lettuce (as needed)
aioli (as needed)
salsa verde (as needed)
egg yolk (as needed)
garlic (as needed)
olive oil (as needed)
salt (as needed)
lemon (as needed)
Directions
Roast pork tenderloin, let rest, shave thin.
Emulsify ingredients.
Combine ingredients, blend until desired consistency.
Season to taste.
Spread aioli on toasted baguette, top with pork and lettuce.
Spread salsa verde on top bun.
Cut into serving portions.
